Tasty, basic Tex-Mex taco meat. You won't miss the beef, nor the fat in this flavorful combination perfect for Fast Days (FDs), or those days when you may want to keep calories lower for whatever reason. The recipe freezes and reheats like a champ and doubles, even triples well! Use it as the protein in many different compound entrees such as enchiladas, chile rellenos, stuffed bell peppers, soups, stews, lasagna, meat sauce. Go fusion with it!

Ingredients
- 16 ounces extra lean ground turkey (Jennie-o)
- 3 tablespoons Taco Seasoning, or Simply Organic Gluten Free Taco Mix
- 3/4 cup onion, chopped
- 2/3 cup red and green bell pepper, chopped
- 1 jalapeno chile pepper
- 4 1/2 ounces green chiles, canned with liquid
- 1/4 cup cilantro, chopped
- 2 cloves garlic, peeled and sliced
- sea salt
- fresh ground black pepper
- 1 cup water
Instructions
- Combine all ingredients except water in a large skillet and cook on medium high until meat is browned and veggies are tender. Add 1 cup of water to the pan and stir. Cover, reduce heat to medium low and simmer 30 minutes or until broth in pan thickens and meat is tender. If necessary, remove lid from pan and let the liquid evaporate. The flavors will concentrate as the liquid evaporates.
