One of the main issues with many reduced calorie or zero calorie dressings is they all have a sweet taste! Ick! When we want vinaigrette dressings, we automatically look for garlic and pepper and salty deliciousness—not sweet! Throw those expensive dressings away and make your own in seconds! Guaranteed to please! Double the recipe and use it as a base for other dressings.
Remember, you choose when a dressing is sweet (like French Dressing or Thousand Island)!
Fast Day Dijon Vinaigrette
Notes
This is a basic mustard vinaigrette. You can jazz up Fast Day Dijon Vinaigrette by using any number of fresh or dried herb combinations. Use fresh herbs! But by adding the herbs to the salad blend and keeping the dressing plain, the dressing will keep longer and herbs will taste fresher. Use 1-2 tablespoons to dress your salads, then toss to evenly coat salad ingredients.

Ingredients
- 2 tablespoons low sodium organic vegetable broth—or homemade vegetable stock
- 1/4 cup Bragg’s Unfiltered Apple Cider Vinegar
- 1/4 cup water
- 1 tablespoon Country Dijon Mustard
- 1 teaspoon Worcestershire Sauce
- 1 teaspoon Tabasco Sauce—or your favorite hot pepper sauce
- 1 clove garlic, peeled and minced or pressed
- 1 teaspoon extra virgin olive oil
- sea salt
- fresh ground black pepper
- 1 teaspoon glucomannan powder—or your favorite low calorie/low carb thickener
Instructions
- Lightly dust glucomannan into broth and stir or whisk like mad until thoroughly combined and lump free.
- (If using gelatin: Divide broth. In 1/2 of broth, sprinkle gelatin and let it sit 5 minutes. Microwave remaining half of gelatin on high for 10-15 seconds. Stir and check heat. It should be very hot! Stir hot broth into unflavored gelatin broth. Stir until gelatin is completely dissolved. Cool completely.)
- Combine all ingredients in an airtight jar or bottle and shake to combine. If mixture is too thick, add more water to thin. Salt and pepper to taste. Dressing will keep up to 2 weeks in the fridge.
